Potatoes contain about 20% of starch and very little protein and fat. They also contain Vitamins A, B, C and G, and the usual minerals, calcium, magnesium, sulphur, iron and an extra large amount of potassium. Their nutritive value is best preserved by cooking or baking in their jackets.

Cooking as soup is another good way of preserving their nutritive value; and that way of preparing is very good for sick persons, especially for fever patients. In cooking potato soup, first boil the water with salt, then put the potatoes into the boiling water.

If you slice the potatoes thinly, they will cook more quickly and very thoroughly. Potatoes are the most easily digested of all vegetables. Sweet potatoes contain more carbohydrates than white potatoes and are esneciallv rich in Vitamin A, but lack the vitamin G.

They also contain considerable potassium and more roughage
